WHEN JAM MAKING.
If the preserving pan is rubbed with a piece of buttered paper before the fruit is put in, it prevents it from burning and also helps to clear it. In making any kind of jam, if a leaspoonful of glycerine is added to every pound of fruit" it will prevent fermentation and crystallisation of sugar on lop of the jam pots.
