INSPECTION OF MEAT.

VISITING EXPERT'S CRITICISM,

Tho Corporation of tho City of London has published a long report written by Lieutenant-Colonel T. Dunlop Young, its veterinary surgeon, on his visit of inspection to Australia and New Zealand at the invitation of their Governments. Commenting on tho inspection of meat in tho slaughterhouses, tho report says:— "While I found that in tho examination of carcases and viscera of cattlo and pigs the organs were examined at the same timo and without their identity being lost, this was not so in tho examination of sheep and lamb carcases; a serious weakness in any system of meat inspection, but one not peculiar to Australia, as tho samo system was observed in South Aroeiica and New Zealand. "The carcases are dressed, tlie sKins passed through an aperture in the floor to another compartment; tho carcases are then passed on to be inspected and [Traded. By this method all identity between the carcases and tho viscera from them is lost. , "In tho United States of America and Canada I observed that all carcases and viscera of Aniwnls wcro ©xfttnincd th® samo time, so that their identity was not lost; thus lesions found in tho viscera caused the inspectors to be specially careful in the examination of the carcases, and in this way it is possible to lceop records as to whether any disease is of a localised, advanced or generalised character. That is meat inspection as it ought to be done."
