TWO COLD SAVOURIES.

Celery Creams.—Ssieve a small head of celery which has been cooked in stock and milk flavoured with a bay leaf. Mix the puree with a gill of good white sauce and make hot, add 2oz. of grated clieeso and season; stir in a gill of aspic, and when cool add a gill of whipped cream. Whisk, on ice it possible, until it begins to set, then fill into small paper cases. Decorate with fancy shapes of beetroot; set the decorations with aspic and leave in a refrigerator or on ice until required. JBanana Savoury.—Cut some bananas in halves lengthways. Spread some fingers of toast the same size as the bananas with whipped cream. Place a halved banana on each, coat with mayonnaise mixed with cream, and place a thin strip of pimento down the centre of each banana lengthways.
