BAKED QUINCES.
Wash sufficient quitres for the meal and score them round and round with a kuite (do not peel). Put them into a baking tin with about pints of water, 307„ butter and 30v.. sugar. Put in a hot. oven and cook till soft, continually pouring the filter and butter over the quinces while cooking. They make a very pretty dish when cooked, and may be served hot or cold with custard.
