IcM Goffee.—Put some strong coffee into a jug «vnd pack it ( round with ice until required. It' served black, sweeten to taste, and add a tabiespoonful of brandy to a pint of coffee. If served with milk, add one-third of boiled milk to two-thirds of icoffee, and when cold set in ice. Condensed milk gives a creamy effect to iced coffee, if reax cream is considered too expensive. Orange Soda,—Required: One orange, o(i6 taulespoonful of brandy, or some liqueur, soda water, ice. Method: Put some crushed ice into a largo tumbler, strain in the juice of the orange, add the brandy or. liqueur, and fill up with soda water. Fruit; Lemonade. —Rub the rinds of four lemons upon a quarter-pound of loaf sugar, iternove the thick white skins and pips and slice the pulp. Put it with the sugar into a jug, and pour on it one quart of bniiing water. Cover closely, and when cold strain and place on ice before serving. Barley Water.—Four ounces pearl barley, two quarts of water, the rind and juice of llaff a lemon, sugar to taste. vVash the barley and put it into a saucepan with cold water to cover bring to tlje boil, and strain. Put the barley into a* jug with the thinly-peeled rind of half a lemon; add two quarts of boiling water. Let it stand till cold, add the lemon juice, strain, sweeten to taste, and serve. Do not throw away the barley, which should be used for a pudding, a soup, or iu a stew. Apple Punch. —Why waste the apple peelings and cores? Instead, wash and boil tnem well, adding the thinly-cut rind of a lemon and the strained juice, and'allowing one pound of apple to one pint of water. Sweeten, add a few cloves and a little cold tea. Stand for an hour; strain. Add a quarter slice of tinned pine and two cherries, and serve very cold. , Oatmealade. —One bsaped teaspoonful of oatmeal, one pint of water, a strip of lemon rind, thinly • peeled, the juic® of half a lemon. Rub the oatmeal smooth in a little ccld water. Boil a pint of water with the lemon rind, and when boiling, add the blended oatmeal. Stir well, and boil for fifteen minutes. Strain, add the lemon juice, and sweeten to taste.
