OUR INVALID RECIPES.

Cook slowly until the rice has absorbed all the liquid and is quite soft and pulpy. It must be stirred occasionally to prevent it sticking to the stewpan. Season to taste, and serve hot.

To Cook a Trout.—Clean, wash, and dry the fish. Score the skin across lightly and coat the trout with a little flour, seasoned with salt. Bake them with a little butter on a fire-proof dish, fry them in butter, or broil under the griller with a -it tie butter on the top. Serve on a dish paper with a cut lemon and parsley.

To Cook a Sole. —Put a small filleted solo into a saucepan with a light seasoning of pepper and salt, and 4 tablespoonfuls ol water. Simmer slowly until the fish is cooked and removo the scu: Then lift out the fish on to a serving dish. Stir a beaten yolk of egg into the water in the pan and whisk until it thickens. Strain over the fish arid garnish with lemon and parsley. WholemeaS Biscuits.—Jib. wholemeal, loz. butter, salt or sugar, 1 yolk of egg, a little water. Rub the butter into the meal and add salt or sugar according to taste. Add the yolk with enough water to form a dough. Roll out on a floured board to £in. thickness. Cut into rounds, prick them with a fork, and bake in a moderate oven from 20 to 25 minutes. Cool off an.d sei with butter.

Whipped Jelly.—Some calf's foot or gelatino jelly. Melt the jelly, put it into a largo basin, and, with a whisk, whip it until cold, when it should be a firm froth and perfectly white. Pile up on a small glass dish, and serve.
