A VEGETABLE MARROW DISH.
Peel and cut a marrow into quarters, remove the seeds, and boil or steam the marrow for 10 minutes. Drain in a colander, and then on a cloth, cut into slices, sprinkle with salt and pepper, dip into frying batter, and fry in hot fat. Drain well on soft paper, and dish on a d'oyley on a hot dish. Sprinkle with chopped parsley and serve at once. If prepared, the slices of marrow may he brushed over with egg and dipped in breadcrumbs and then fried. The remains of a cooked marrow mav be used in this manner if not too soft. *
