Tomato Biscuits.—Choose firm tomatoes, soak them in boiling -prater for a minute or two, remove the skins, and eut the tomatoes into thin slices. Sprinkle xvith salt and pepper. Work an ounce of butter with ful of made mustard, a tablespoohful of chopped parsley, and a good dash of paprika, to a smooth paste, spread this on round cracker or water biscuits, place one or two slices of tomato on each, put a piece of the butter, about the size of a pea. on each tomato, and garnish with the sieved rolk of a hardboiled egg/ Cheese Fingers.—-Pound and mix loz. of butter, 3 tablespoonful.s of grated cheese, 1 tablespoonful of chopped watercress. salt, pepper, paprika to a paste. Spread on fingers of toast, dust with paprika. Served garnished with watercress.
