IMMATURE VEAL.

Sir, —I would like to ask how many farmers, and for that matter anybody else in this country, would relish a dish of this class of veal placed before them. I venture to say there are very, very few, if any, and yet we are asking other people to eat it as a food. The calf is supposed to be at least three days old before being killed, but I fail to see how anybody can say for certain that a certain calf is, or is" not, three days old. I am a farmer myself, and know just what a business it is to teach a new calf to drink, or in the alternative, how inconvenient it would be to allow the calf to remain with the mother till the third day; so I assume that, m many cases, the line of least resistance would be taken and the calf got rid of at first opportunity. A great deal has been said about the so-called waste of this class of meat hitherto Now is it a fair thing to look on it as waste, an article that we ourselves do not regard as fit for our own use ? Surely this country is not so badly off that we are forced to such mearis to enable us to hold our heads above water. E. A. Hammond
