N.S. WALES MILK YIELD.
OFFICIAL STATISTICS. The New South Wales Government Statistician points out that, "in the absence of information concerning the total number of cows milked and the periods for which they were milked during the year, it is not possible to ascertain definitely the average quantity of milk produced per dairy cow-; but.-for an assumed .lactation period of 260 days, the yield per cow in registered dairies during the year 1921-22 was, on the average, 368 gallons, equivalent to about 1681b. of commercial butter, or Isolbs. butterfat." The average quantity of , milk required /«■"»? <*? year to produce lllb. of butter is given as 2.18 gallons in the . case of butter made in factories, and A. 8' gallons for butter made on farms, i or a general average of 2.22 gallons per lb. _of butter, which is the lowest rate of which there is record, the highest being 2.65 in 1905-1906.
