PRESERVING FRESH MILK.

NEW STERILISING PROCESS. THE FACTOR OF EXPENSE. [BY telegiujph.—own coerfspondent.J HAMILTON, Wednesday. With respect to the statement published in the Herald regarding preserving fresh milk by the Danish sterilising process, the managing director of the New Zealand Co-operative Dairy Company, Mr. W. Goodfellow, stated to-day that there wan no scope for such a process iiu New Zealand, and it-was absurd to thinik that sterilised milk would in any way interfere with the sale of skim milk powder. As a. matter of fact, he had not only inspected the Jensen sterilising plant in Denmark, but had also secured an option over the New Zealand rights for it. For various reasons his company had decided not to purchase the process. The cost of sterilising milk up to 300deg. Fahrenheit, was considerable, and, further. milk, owing to its bulk and weight, could not be profitably exported. Fresh milk delivered to London during the past few months had been sold by the farmer at' 7d a gallon. The Jensen process had some advantages, but would, in his opinion, only be used to supplement the town supply of large cities when fresh milk was very scarce. The Danes lad talked a lot about shipping milk to London, but nothing had been done, foi' the very good reason that it would not pay to do so, although Denmark was only 24 hours distant by steamer. The single 10-gallon can of sterilised milk sent by the Natal Creameries, of South Africa, to Mr. Sutherland Thompson, the Danish agent in London, was simply a test which was not made with the "idea of sending regular shipments of sterilised milk from South Africa to London.
