THE FRUGAL KAISER.

POTATOES IX THEIR JACKETS. It is significant that the Gorman newspapers have latterly been publishing many stories which go to show that the Cerhnan Kaiser is now living in the most frugal, not to say niggardly, manner. He has heroically sacrificed his favourite breakfast of German sausage and substituted in its stead " potatoes in their jackets." He explained to one courtier whom ho invited to share this sumptuous repast that the most nourishing part of the potato was just under the skin, which careless cooks invariably cut away— hence his imperial mandate for "potatoes in their jackets." Possibly the Kaiser has never beard of a famous" old Irish dish called "potatoes and point," or he might have ordered a German herring to be suspended in his breakfast room, in order —in accordance with the old Irish legend —to "point" his potato with a honing flavour. Herr Ganghofer, the- Bavarian ppet, who recently lunched with the Kaiser, was also introduced to the jacketed potato—and dutifully praised it. Another reference to the same dish was made- by the Berlin correspondent of the Dutch Telegraph, who telegraphed the itews that the Kaiser and Kaiserein had for breakfast recently " only tea and an egg, and at mid-day soup, two courses and unpeeled potatoes." The same corI respondent declared that the Kaiser, when in Berlin, lives even more frugally than this—putting his meat in his soup and eating with it unpeeled potatoes and ' war bread.' " As " war bread " contains a mixture of potatoes : n the Hour, the German Emperor is evidently doing his best to elevate the potato to the dignity of becoming Germany's national dish.
