NEW WAY OF PRESERVING MEAT.

London, January 26. A new method of transporting meat in good condition has just been devised and has already commended itself ta the market. Instead of refrigeration, which demands an apparatus that cannot be installed in all the parts of South America from which the best cattle are obtained, the meat is simply dried artificially in a vacuum until a thick, impenetrable crust is formed sufficient to protect the interior parts. When the meat has been transported the crust is removed, and the flesh is found fresh and eatable underneath. Meat so dried is not intended for conservation during many months, but for consumption as soon as the voyage from America to Europe is completed. FcT these purposes it has proved useful.
