DAIRY BUTTER.
TO THE EDITOR. Sir,—ln reply to Mr. Hewin, I beg tc state I am neither connected with the Freering Company or Dairy Association, but be long to the large crowd of the general pnblie who are willing to pay & good price for a good article. Much of the so-called batten retailed at la 6d per lb, is little superior— except in point of ornamentation—to go*d cart grease. The reason the Freezing Company s butter met with such ready sale was on account of the evenness of taste and quality, combined with firmness, and the absence of the rank smell which is prevalent in so-called dairy butter, Mr. Hewin and the Dairy Association notwithstanding. As to the contention that fanners do not get a good price for butter, which is retailed at Is 6d or more per lb, this, on the face of it, is all bosh; or, if they do not get a fair price, somebody else certainly does. If «rvary I Hitter maker, who has excellence of producon at heart, used the simple plan of stamping his name, and date of manufacture on & good article, he _ would soon be in sympathetic accord with the public, and reap the benefit of good prices and almost unlimited demand. There may be isolated cases of food buttermakers who feel aggrieved, as Mr. Reynolds— to whom, sir, being satisfied with your opinion of his sample, I must apologise—but they are so few and far between that their productions are lost, sight of in the general market average. I trust the Government dairy . inspector or instructor who is now visiting this district, will not leave it until dairymen become past m&etare in their business, and then, sir, you will be no more troubled by A Grumbler.
