The following report, from a friend of Mr. Thomas Morrin, relative to cheese-making in America, "was read for the benefit of the members :— I give you herewith an account of the Eatonrille Factor}"« Herkimer County, Nt:w York State; Mr. Smith, manager. Cheese-making commenced this year (1S70) on .March 2_nd, »ntl will close in December. Five hundred and seventy-flve cows, from eighteen farms, supply tiie milk, which is delivered at the factor}- at a.m and at S p.m. some travelling two miles from the farm. The milk from each farm is tested against trickery, hut no allowance is made for quality. The nijht's milk is chilled. The milk, after weighed, id warmed up to Si degrees.
