RAISIN ROLLS 6ift }lb. self-raising flour in a basin with a pinch of salt. Then rub in 4oz. butter or margarine and make into a stiff but smooth paste with the yolk of an egg and a little cold water. Roll oiit into an oblong. Next chop slb. raisins with 2 sour apples, add 3oz. brown sugar, 1 teaspoon powdered cinnamon, 2oz. ground almonds and loz. melted butter. Mix all together and spread over the pastry, then roll it up and fasten the edges together with the white of an egg, and brush the roll over with the rest of the egg. Put on a baking sheet and bake in a fairly hot oven for about 30 minutes or until the pastry is golden brown in colour. When needed for the table, cut in slices with a sharp knife.
