Madras Steak. Dredge 21bs. of rump steak with loz. flour, 4pd lay it flat in a greased meat tin. Cut up one onion, shed one apple and cover the steak. Place a sheet of greased paper over the top and put a plate or cover over it. Cook in a moderate oven for 20 minutes. Now add one teaspoon curry powder, and one tablespoon vinegar to one cup of hot water, and add to the steak. Replace the cover and stew gently for li hours. Serve very hot with the onion and paple on top, the gravy poured around, and a border of boiled rice. Old-time Coaches.
