WHITEPOT—A GLOUCESTER DISH

This is very useful as a cold sweet during hot weather. Ingredients: 1 gallon new milk, I-lb. plain flour, 4 eggs, i nutmeg grated, treacle, 1 tablespoon demerara sugar, and a small piece of butter. Mix the flour and grated, nutmeg inta a smooth butter with some of the milk and boil the remainder; pour on the batter, mixing well, then add tho eggs well beaten and tho treacle and sugar and butter. Butter a largo dish or paz? and pour the mixture in and bake in a moderate oven for 3 or 4 hours. Just before putting into tho oven add a cup of cold water, not mixing it. This will form a white jelly in the. pudding. Bake until nicely set, not too firm, as it gets firmer when cold.
