Melon Jam

121 b. melons, three lemons, 101 b. sugar and lib. ginger. Cut melon in fairly largo pieces, but do not cut too near skin. Cut lemons finely and add. Then cover with 31b.. sugar and leave overnight. Next day boil tho whole slowly for two hours, then add bib. sugar and ginger and boil a further half to ono hour (keep testing). Add tho remaining lib. sugar, juice of three lemons and tho dessertspoonful' salt. 801 l till it jells.
