Carrot Flour.
North central Washington residents who wish to have a change from using wheat flour have now the opportunity to switch to carrot flour. A mill at Winthrop is milling flour from dried carrots in much the same way that wheat flour is produced. The new flour has a sweet taste, a pleasant orange shade, and has been used successfully in baking cookies, cakes, muffins, pics. Five tons of fresh, raw carrots are required to make one ton of carrot flour.
