MANY USES OF WALNUTS

The walniifr can be put to many uses. In California it lias been discovered that no part of this product need be wasted. There has been installed modern machinery, including a machine for cracking nuts. It can deal with fifteen tons a day. The nuts are passed through a number of metal fingers which crack the shells without hurting tko kernels. For nuts which are unfit for salo without cleaning there is another machine which removes the dirt and polishes the walnuts. This is worked by compressed air which moves a number of ibrushes fitted into a long trough. Shells, which hitherto had been regarded as waste matter, are now made into charcoal. The kernels, besides being canned,are used in many other ways. They are made into nut loaf, which is said to be an excellent substitute for roast beef ! Walnut bread is quite popular. Muffins, cakes, and .puddings arc other things made from ■nuts.
