An Appetising Potato Dish
Ingredients :—Potatoes, salt, popper, nutmeg, butter, dried pears, milk, 4 eggs. Peel the potatoes, cut them into cubes, and put them into a casserole With salt, chopped parsley, plenty of grated nutmeg and butter. Wash and core the pears; shred them not too finely, and add them to the potatoes, with milk or milk and water. Stew gently in the oven till potatoes are just cooked. Leave enough gravy to make the dish appetising, allowing also for the fact that the eggs will absorb the liquid. Beat up the eggs and add to other ingredients; shako lightly to incorporate all, and return to the oven for the eggs to set. Turn out into a pretty dish, and serve piping hot with' cubes of bread which have been well toasted in the oven.
