Transparent Cake Glazing

Put one pound loaf sugar into a pan, add half gill of warm water, stir with a wooden spoon until the sugar has melted. Then boil for five minutes or until reduced to a thick syrup. It should register 230 Fahr.. Pour into a basin and stir before it i-s quite .cold. It must, however, be-used before it is quite cold, or it will not flow smoothly and give a glazed appearance to the cake. It is a difficult icing, and requires practice to judge the exact degree for boiling without a thermometer and the time for pouring it over tho cake.
