To the Editor. Sir, —I would beg the favour of a little space in your valued columns in answer to Crs. Hodgens’, and Guy’s remarks re cow beef. The former’s remarks are born of pure ignorance of the business he is trying to criticise. I would like to tell Mr. Guy that good beef is obtainable, and I can supply it if he is willing to pay the price. He should know, being a farmer, that it is not sex that counts, but age and quality. I have been approached on more than one occasion to purchase cows from him which have been represented to be as good as ox, so why not be consistent ? The average bullock is much too large for our present day requirements, and we are forced to resort to a smaller animal. The average bullock weighs as much as a cow and a half; so that the cow beef is not so much in excess as figures would make Gne think. Tho ideal butcher’s boast is a bullock weighing about 600 lbs.,, and this class of animal is unprocurable; so there is a chance for Mr. Guy to show his ability as a beef raiser. In conclusion, I would like to say it is tho Council's business to kill whatever animals it is asked of them, and tho Government veterinary inspectors to reject that which in his opinion is unfit for human consumption. I think tho Council should confine its attention to important matters of the town, and not to criticise a business they have no knowledge of. Yours, etc., C. GRAY.
