APRICOT CHUTNEY
Two pounds apricots, lib sugar, 31b raisins, }oz dried chillies. ioz green ginger, loz garlic, loz preserved ginger, Joz mustard seed, (bruised), one quart vinegar. Put apricots in a little water and boil until tender; add sugar, boil 20 minutes and’ leave to get cold. Stone and chop the raisins, pound the ginger, garlic and chillies (separately) into a paste with a little vinegar, mix all together and boil for 40 minutes, or until a spoon will stick to it. When cold, bottle.
