PEACH CHUTNEY. The following excellent recipe is given in answer to a correspondent’s request:— Pour lbs. of "peaches (not too ripe), 21b. sultanas, 41bs. brown sugar, lib. muscatel raisins, lib. green ginger, Jib. dried ginger (well boiled), Jib. salt, 2ozs. small' chillies, 2ozs. garlic, 4ozs. white mustard seed, two bpttles vinegar, Cut up peaches, sprinkle with salt overnight; strain off water; boil in one bottle of vinegar till soft, then let it cool Mix the sugar in remainder of the vinegar till a syrup, then add the rest of the ingredients chopped fine and reboil, taking care that it does not burn. Place in a warn place for a month. (This may be made with apples instead of peaches).
