APPLE SNOW. Two pounds of sour cooking apples, 4oz. of caster sugar, the thinly-cut rind of one lemon the whites of two eggs. Peel, core, and slice the apples and stew them with three tablespoons of water, the rind of the lemon, and sugar until tender, then pass them through a sieve.
