TO-DAY'S RECIPE
APPLE SNOW. Two pounds of sour cooking apples, 4oz. of caster sugar, the thinly-cut rind of one lemon the whites of two eggs. Peel, core, and slice the apples and stew them with three tablespoons of water, the rind of the lemon, and sugar until tender, then pass them through a sieve. If necessary, add more sugar, Let the apple pulp become quite cold, then mix in lightly the whites of the eggs previously whisked to a stiff froth. Serve in a glass dish, and garnish with some of the snow coloured a pale pink.
