COMPULSORY CREAM GRADING

RADICAL •CHANGES IN METHODS OE COLLECTING.

GREAT IMPROVEMENTS IN RESULT.

“Warning lias been issued by the Ontario Department of Agriculture to the creamery men of Ontario that the government intends to make cream grading at all creameries in the prov-j ince compulsory next year, this will Involve cream being paid for according to its grade. There will be at least three grades and possibly four. It is intended to adopt the same grades that have been in force in Western Canada for sevex-al years and which are now in force in the • Provinces of Quebec and Nova Scotia. There will be a uniform difference in the price paid for different grades of cream which will be followed by all the creameries. This difference will be such as to make well worth the while of patrons to put forth special efforts to produce the hlgest possible grades of cream. If the results attending the introduction of this system in Ontario are anything like those which have followed its introduction by the. three prairie provinces, we may expect to see the greatest im. provement in the quality of Ontario butter next year that has ever been reported in one season. “The proposed new system of cream grading will necessitate radical changes in the system of collecting cream now followed in certain parts of the province and by some of the largest creameries. As the cream can only he graded at the creamery, it will no longer be possible for creameries to collect in wagon tanks or in the large jacketed cans sometimes used. Shipping stations will be eliminated, as they have been in Al- . berta. No objection to this change has yet been reported, even in Western Ontario where most of the shipping stations are located.’*
