NEW METHOD OF PRESERVING

Mr Flowers, M.L.C., chairman o* the Sydney Abattoirs and Meat Trade Board stated a few days ago that he had had brought under his notice a proposal which, upon iuvestiagtion, might materially affect the condition affecting the domestic meat supply of New South Wales, and particularly of Sydney and other large centres of population. "Representations have been made to me," Mr Flowers said, "that there is a method of preserving meat that will obviate the necessity for freezing or refrigeration and the contingent heavy cost for machinery and insulated storage. It is asserted that a long series of experiments have proved indisputably that by this process meat may be kept absolutely 'fresh' for an indefinitely extended period, and that this may be done not only at a very small cost, but under such conditions as would ensure an enormous direct saving to wholesale and retail butchers and —what is of equal, if not greater, importance—to consumers of meat. The matter is before me in a confidential stage at the present time,'' Mr Flowers added, "but it is my intention to bring it before the board at the earliest opportuntiy and to give those who are interested in it every opportunity of demonstrating the system and proving the accuracy and practicability of their proposals. '' From what can be gathered, apart from the statement made by the Chief Secretary, patents connected with this matter are held by a couple of Sydney people, who have spent much time and money in a long series of experiments to achieve the longed-for evolution in food supply that will do away with refrigeration in all its form, and they claim that not only will the quality of the meat supply be greatly improved under conditions that meet Board of Health requirements, but that they can also show enormous economy to stockowners and to the railway department in connection with the transport of stock.
