A RECIPE.
Take lib cold potato (mashed), pepper, celery salt, few drops onion juice. 1 level tcaspoonful chopped parsley, ioz butter, salt, dash of cayenne, 1 egg-yolk, breadcrumbs. The ingredients should be mixed together and heated thoroughly. Spread the paste on a plate to cool. Cut it into suitable pieces and shape each piece .into a roll, handling it as carefully as possible. Brush each croquette with egg and then coat it with ' crumbs. Fry the croquettes quickly in deep fat, using a, frying basket, and drain them on brown paper. Potato croquettes can bo made into different shapes. It preferred the paste may bp rolled into a ball and then flattened slightly to form a cake. Small, balls of this potato paste coated with egg could also ho made.
