DAIRY PROBLEMS.

REMOVING ANOMALY. SIIORT-G’REDITING OF' FAT. AUCKLAND, Oct. 7. Much of the present competition existing between dairy companies, which has resulted in certain cases in practices which are considered undesirable, will be eradicated as the result of new regulations contemplated by the Government. Addressing the Auckland branch of the Dairy Factory Managers’ Association, Mr \V. M. Singleton, Director of the Dairy Division of the Department of Agriculture, referred to the competition between eonii panics as affected by tho publication of the yields of butter and cheese as per pounds butterfat, also the payout for the season as per pounds butterfat. Mr Singleton said it was known that sonic companies were giving suppliers Jess cicdit for 1001 b butterfat delivered than others. The amount of butterfat shortcredited caused au unjustified apparent increase in the yield and in the payout to tho suppliers. The check-testing carried out by the Dairy Division at dairy factories had been of assistance in rectifying somo of these anomalies, but it was now proposed to use the aggregate number of pounds of butterfat recovered in the butter or cheese, as tho caso may be, as the measuring stick. The number of pounds of butterfat which with etheient work could be recovered in butter or chocee as per 1001 b butterfat actually received was fairly well known, said Mr Singleton. The minimum quantity of butterfat which should have been credited to tho suppliers could be calculated from tho number of pounds of buttcrfaL recovered in tho product. It was suggested, ' added Mr Singleton, that dairy companies which had been doing short-crediting would in future bo required to use for balancc;sheet purposes the calculated number of pounds received rather than the number of pounds of butterfa't which tho company had credited.
