A RECIPE.
APRICOT M ARM ALA DE. lib. dried pricots, 31b. of preserving sugar, the grated rind of two large lemons. Wash the apricots in several waters, cut them up, and leave to soak in three pints of cold ’water for 24 hours. Next the fruit and the water in which it has been soaked must he boiled, until the fruit is soft. Allow to cool, remove the skins, add the sugar, and boil until the syrup thickens. A few minutes before removing from the stove add the grated lemon peel.
