NUTTY RECIPES.

Here are some coconut recipes which are special favourites, beginning with snow cake. Snow Cake.- —-Three eggs, 4oz butter, 6oz castor sugar, 2oz desiccated coconut, Jib flour, pinch of salt, one teaspoonful of baking powder, milk if necessary. Cream the butter and sugar, add the beaten eggs, stir in the sifted flour gradually, then add the coconut, salt and baking powder. Stir well, adding a little milk if necessary; pour into a greased and lined tin, and bake in a moderate oven for on© and a-half hours. While hot, brush the. sides a.nd top ivith white of egg, then sprinkle with coconut. Rock Buns. —Coconut buns take next to no time to make. Half a pound of flour, 3oz each butter, sugar and desiccated coconut, two eggs, teaspoonful of baking powder. Cream butter and sugar, add the eggs and flour, stir in the cooonut, sa.lt and baking poivder. Put a spoonful of mixture into small greased tins and bake in a moderate oven for 15 minutes. Coconut Kisses. —Put a small cupful of water into an aluminium pan, add lib loaf sugar and stand over a gentle heat until melted, then boil and stir quickly for 10 minutes, or until the syrup thickens. Remove from the fire, and stir in 4oz desiccated coconnt and mix well. Press half the mixture into a shallow greased tin, colour the. remainder with a few drops of cochineal and place it on top of the white. Press together and when partly cool cut into small bars. Wrap each in greaseproof paper and store in a tin. Sweet Pyramids. —Coconut pyramids are quickly made when something special is wanted in a hurry. Mix together 2oz coconut and 4oz sugar. Whip the white of an egg to a stiff froth, add it to the coconut mixture and beat well. Form into pyramids, place on rice paper and bake in a moderate oven for 15 minutes. Chocolate Nuts. —The most delicious of many siveet sandwiches is called the chocolate nut. It is made with two shortbread “cookies” or biscuits spread with a chocolate icing mixture. The icing is then covered with chopped ■walnuts, and the two halves are pressed together.
