NEW ZEALAND CHEESE.
i It is gratifying to j*arn that New I Zealand cheese has u&r become a recognised factor in "fife Home trade. : Tli© shipments of New Zealand's im- ■ ports increased from nine million I pounds for tho year ended 30th June, 1904, to fifty million pounds for the same period ending in 1910. The increased arrival of New Zealand cheese during the winter months in the Home markets materially lessened the speculative demand for Canadian cheese to supply the English winter trade. The Canadian Dairy Commissioner points out the singular fact that the increase of New Zealand importations for tho year ended 30th June, 1910, as compared with 1904, should tally so closely with tho decrease from Canada for the same period. He also comments on tho special significance of the fact that a larger proportion of the Canadian summer cheese output is now wanted for immediate consumption, and that a higher level, of prices is maintained during tho period of greater production. The Commissioner does not wish it to be supposed that Canada has lost, or is yet anywhere near losing, her premier position in the cheeso markets of Great Britain. Canada still supplies about 66 per cent of the total cheese imports into the United Kingdom. The Canadian Commissioner also affirms that, apart from its green—that is unmatured—condition, the quality of Canadian cheese has improved of late years. These facts and figures should stimulate New Zealand producers and manufacturers to put forth every effort to onsure the quality of New Zealand's output being 6ueh as will ensure the official grader's highest verdict.
