QUALITY OF BUTTER IN ENGLAND

(To the Editor) Sir, After the decision arrived at that a sample of New Zealand butter was a long way head of its competitor the enclosed extracts from two letters just received by me from England are, to say the least, interesting. It is satisfactory to know that we in New Zealand find our butter superior to Danish, but unfortunately it would appear that our customers in England do not always agree concerning all our butter. There are two old sayings which it might be well for us to bear in mind, viz. : “ Don’t count chickens before they are hatched,” and “ There is never smoke without a fire.”—l am, etc., *

L. WHISTLER. Walton. From Salisbury We always buy New Zealand butter, generally through the store. A week or two back we noticed that it was not as good as usual, ;• and mentioned it to a friend, who said at once that she had had to buy elsewhere. So when I was last in .Salisbury I asked the what was the matter-with the stuff. The man said at once quite candidly that he had had complaints , from all, over the place. He had told his headquarters, but they Would not believe him. So I asked him more, 1 and he volunteered that to avoid ,-the duty his firm “ was no longer blending Danish butter with New Zealand butter.” I suppose there are grades and grades of New Zealand butter, like everything else, but the public won’t have them. From London New Zealand must or ought to do two things reduce production to a certain extent and get factories to turn out butter that will keep better. The latter seems a great drawback to New Zealand butter —so many say it does not keep.
