CINNAMON COFFEE CAKE.
Quarter pound dripping, 3 cups flour, % lb. butter, four level teaspoons cream of tartar, 1 % cups sugar, 2 level teaspoons soda, lib. seeded raisins, 1 egg, 1 tablespoon cinnamon, 1 V 2 cups of strong coffee. Use black coffee and dissolve soda in it. Cream butter and dripping with the sugar, add the egg and coffee, then the flour sifted with cream of tartar, cinnamon and salt. Bake in a moderate oven for IVi to 2 hours in shallow tin lined with paper.
