DELICIOUS JUNKET.
Pineapple Junket. —Take one pint of fresh milk, one teaspoon of rennet, one tablespoon of sugar, a few slices of pineapple. Make the milk lukewarm, so that you can dip your finger without being able to feel the heat. Add sugar, stir in rennet and pour quickly into a glass dish. When set lie some slices of pineapple on top. Coffee Junket. —Put one tablespoon of coffee essence and one tablespoon of sugar in a pint of milk, and make it lukewarm. Stir in one teaspoon of rennet a'nd pour quickly into a glass dish. Chocolate Junket.—This is made by dissolving a bar of plain chocolate in half a pint of milk in a double saucepan. Add a little sugar according to taste, and when the chocolate has dissolved, add another half-pint of milk. It is finished like other junkets, by stirring in one teaspoon of rennet and pouring into a dish. Just before serving sprinkle with 100’s and 1000’s, or a little desiccated cocoanut.
