ORANGE CREAM.
A DELICIOUS CAKE FILLING
Take four medium-sized oranges, two and a-half cupsful of water, the yolks of three eggs, one tablespoonful of butter, one lemon, one cupful of castor sugar, three tablespoonsful of corn-starch. Put two cupsful of the water into a saucepan, add the grated yellow rind of two of the oranges, and place pan on fire. Now dissolve (the corn-starch with the remaining half-cupful of water, and stir into the boiling water with a wooden spoon. Simmer for 10 minutes, stirring all the time. Then beat sugar and yolks of eggs together, and add. Cook for another two minutes, still stirring. Then remove from fire, add, butter, orange and lemon juice and set away to cool for use as filling.
