There is every probability of hoik hutter and cheese of this new season's make reaching a bare market in England by the time it arrives (says th« .Wellington Post). So far as output* are concerned their disposal for thi* season appears to- have been now all arranged. While 9£d f.o.b. has undoubtedly been paid for cheese in some instances, 9-£ d appears to have been about the price for North Island and a penny less for South Island outputs where a consignment policy has not been adhered to. With regard to butter, there ha« been an innovation which in the long run should be beneficial in eliminating speculation to a large extent. High prices have been paid for' September-Octooer shipments, and sales are now likely to be made from month to month instead of for the whole season. This system of -selling may obtain during the war period; if then found successful may be adopted afterwards. It has much to commend it in both buyers' and sellers interests. Some years ago, with a view to re : ducing, if not to eliminating, speculation, fortnightly or monthly gales were suggested, but not generally taken up. The war seems to have partially accomplished what many in the trade regard as an improvement in the, method of dealing with the produce. Pepsin is being used in many cai.es to eke out rennet for cheese-making, but there will still be a shortage/of the latter. If all rennet shipments arranged for arrive for this sekson there should be no necessity to stop production. Stocks of rennet,-however, are not evenly distributed, but it is to be hoped that factories who have more than enough for, .their.^requirement-, will come to. the aid'-or those;"who are short, should it be necessary,, in order to prevent any factory -closing. The Government has been successful the High Commissioner in inducing the Imperial- Government to facilitate export of rennet to New. Zealand, the seriousness of the position being fully realised. ,
