DAIRY PRODUCE.

The complete records of the shipments of dairy produce for the past year are now available, and the steady expansion of the industry is one of the striking features of New Zealand farming. The exports of butter last year totalled- 204,360cwt., valued at £893,674, as against 172,5660wt, valued at £730,508, in the previous year. The value of (he exports shows a relatively higher increase than the quantity exported, and this because a higher valuation has been placed upon the butter. The average value of last year's shipments works out at 87.46 shillings per cwt, as against 87.63 shillings in the previous year. It is doubtful whether the produce will net this average, but the burden of loss, if any, will fall upon the dealers.

The cheese exports last year amounted to 101,046cwt, valued at £231,661, as against 101,948cwt, valued at £227,711, in 1900. There is a reduction of 900ewt in the quantity exported, but values show an increaee cf £3950. In 1889 the shipments of cheese amounted to 67,369cwt, so that there has been a satisfactory increase during the past two years. Since 1898 there has been rapid progress, mainly owing to the high prices ruling in the terminable markets. The support of Australia also has been beneficial, and our producers have enjoyed three years of prosperity. This cannot be expected to continue, for the very attractiveness of the market is certain .to stimulate the competition of other countries, and sooner or later New Zealand will feel the rivalry.
