Two splendid recipes. One for a plain fruit cake; the other for a I'ich fruit cake suitable for a birthdaj cake; —

Plain fruit cake. —Ingredients: bo/., butter, boz. sugar, boz. plain flour, three eggs, box. self-raising Hour, boz. each of currants and sultanas, a little milk. Cream butter and sugar, add eggs one at a time, heat well together. Add milk, and a few drops of essence of almond or vanilla, if desired. Mix r"ua through the sifted flour, then add gradually to the mixture. Put m a greased tin, lined with paper, and bake in a moderate oven for an hour and a-half. .. , Rich fruit cake. —Ingredients: iim butter, Mb. brown sugar, jib. plain flour, two level teaspoons baking powder, a pinch of salt, three eggs, ooz. each of currants, seeded raisins and sultanas; 2oz. of candied peel, and onequarter pint of milk. Beat butter and sugar to a cream, add beaten eggs, then milk, which must be stiued 111 gradually. Sift flour and baking powder with salt, and add to mixture. I inallv add fruit and mix all well together. Put in tin lined at bottom and sides with brown paper. Bake two houis, 01 more, in a moderate oven.
