TO-DAY’S RECIPE
CREAM PUFFS. Ingredients: 2ozs. butter, 2ozs. flour, 2 eggs, } pint of water. Method: Put the butter and water into a saucepan and bring to the boil. Then take off the fire and add the flout quickly, beat well, then add the unbeaten eggs one at a time and beat thoroughly for about ten minutes or until the mixture is smooth and shiny. Drop teaspoonfuls on to a cold greased tray, and bake in a fairly hot oven about half an hour, opening the door as seldom and as gently as possible. Leave on a tray to cool, fill with the following filling: Take one cup of whipped cream, the whites of two eggs, Sozs. of sugar, Joz. of gelatine, any flavouring. Dissolve gelatine in a quarter of a cup of hot water. Whip the eggs stiff, add sugar, gelatine and cream. Fill the puffs before the mixture sets. Sprinkle with icing . sugar or spread with chocolate icing.
