WHITEBAIT FRITTERS. Did you know that very delicious tins of New Zealand whitebait containing 15ozs. of nice fish can be bought for 1/61 This can be heated in white sauce or made into fritters. For the latter make a batter of 4 tablespoons of flour, mixed smooth with 4 tablespoons of milk, salt, pepper and two beaten eggs. Add one or two cups of whitebait. Heat a little butter in a clean frying pan. Drop in tablespoons of the mixture. Let the under aide set and then turn each fritter. Brown both sides lightly. PUMPKIN PIE. Two eggs, one small cup of sugar, one cup milk, one cup sifted cooked pumpkin, one teaspoon ground ginger, half teaspoon cinnamon. Make puff paste to cover an enamel plate. Bent the eggs, sugar, and milk, and then gradually add the pumpkin and the spices. Pour the mixture on the pastry coveting the plate and bake in a good oven till nicely set. FOAM BISCUITS. (Easy and Cheap!. Three cups flour, one cup sugar, half cup milk, one cup butter or dripping, one level teaspoon carbonate of soda. Heat the milk and sugar and when boiling put in the soda. When cool mix- this foam mixture into the flour and butter. Roll out very thin. Cut into rounds or strips. Bake in a quick oven.
