BUTTERFLY CAKES. ilb. of butter, 1 teacup sugar, 2 eggs, 2 cups flour, 2 teaspoons baking powder, 1 tablespoon milk. Beat butter and eggs to a cream, add eggs well beaten, then flour and baking powder mixed, and lastly milk. Half fill paper cases with mixture, place on cold oven shelf and bake 15 minutes in good oven. When cool slice small piece off the top of each, put a teaspoon whipped cream on, cut piece in half and stand pieces up on edge on whipped cream. If desired, decorate vrith small pieces of jelly. SHORT PASTRY. 2 breakfastcups flour, 1 teaspoon baking powder, Jib. butter, lard or dripping, pinch of salt cold water. Sift flour, rub in butter or dripping, add baking powder and salt. Mix with enough water to make a firm paste. Use as required. Bake in a quick oven. If liked, 2 teaspoons of sugar may be added to this pastry for sweet dishes. APPLE DUMPLINGS. J cup flour, i teaspoon baking powder, 3 apples, 4 cup suet (chopped), A cup breadcrumbs, 1 teaspoon salt, 3 dessertspoons sugar.

Prepare apples, mix flour, suet, breadcrumbs, baking powder and salt together, add water to make a paste. Place a piece of paste around each apple, put dessertspoon sugar in each, then cover top. Put dumplings loose into pan of boiling water; when they come to the surface give them half an hour.

VANILLA SAUCE (for puddings, etc.)

1 pint milk, 1 heaped dessertspoon sugar, 1 dessertspoon custard powder (Vanilla flavour). Mix custard to a smooth thin cream with about i cup of the milk. Bring remainder of the milk to the boil, then stir in the mixed custard and cook a minute, stirring all tho time. Serve hot or cold. Add more essence if desired.
