A SPECIAL RECIPE
PEAK MARMALADE. (Contributed.) This very delicious jam was tasted and found excellent as it boiled in a large copper at the Good Cheer Depot. Mrs Ellis, Home Science teacher to the young unemployed Hastings girls, who were learning to cook and preserve, kindly gave the recipe for anyone to try. 61b pears, 6 lb sugar, 4 oranges, 3 lemons, 1 pint water. Cut up the oranges and lemons, cover with the water, and stand overnight. Cut up tho pears, cover with half the sugar, and stand overnight. Next day put all together and boil till the pears are clear. A NICE SAVOURY. DovilW Liver: Wash some good calf’s or lamb’s liver, dry, and cut in rather thin slices, brush each slice over with mustard and chutney, sprinkle with cayenne pepper, then dip in melted butter or good dripping, and broil over a good clear fire. Serve with highly seasoned fried mushrooms and crisply fried rolls of bacon. If mushrooms are unattainable replace them by tomatoes peeled and sliced rather thickly. To prepare the tomatoes, spread with butter and a sprinkle of cayenne pepper and bake very quickly When done sprinkle with chopped parsley and serve with the liver and bacon.
