If you want a jelly to set quickly, dissolve the gelatine in a small quantity of hot water, and add cold water to make up the amount, so that no time is lost in waiting for the liquid to cool. Another way of making a jelly set quickly is to dissolve a handful each of salt and soda in a bowl of cold water, and .stand the jelly mould in this. A mild freezing mixture is the result, and a firm, cool jelly may be quickly prepared on the hottest day. Difficulty is often experienced in turning out a jelly. To remedy this try greasing the mould before pouring in the liquid. If this has not been done and you are afraid the jelly is not going to turn out whole, plunge the mould into hot watei for a second, and you will have no further trouble. In trying to turn out a jelly in the centre of a dish do not give sundry little jerks to get it in position but run a little cool water over the dish. The jelly will slide into position without trouble and the water may then be poured off. In spite of all your care a jelly may 'efuse to come clear from the mould on account of too much water o: incorrect mixing. In this esse, cut it into chunks and cover it with the whipped whites of eggs. Thus it will make a very appetising dish, and one that is quite out of the ordinary.
