SPECIAL “TRIBUNE” RECIPES.
LEMON BUTTER, OR CHEESE CAKE FILLING. 2$ oz butter. 4 eggs. 10 oz sugar. 2 lemons. Beat up the eggs, add sugar, butter, grated rind and strained juice of the lemons. Place in a jar and stand this in a pot of water over the fire. Stir the contents of the jar until about as thick as honey. Will keep for months if covered like jam. Use for tarts, sponge sandwiches, etc. These quantities make about 1 pint of lemon butter. FOR WINTER PARTIES. PASSION FRUIT CREAM. 1 pint milk. 4 eggs. 2 dozen passion fruit. } oz powdered gelatine. Sugar to taste. Make a custard with the milk and yolks of the eggs, dissolve the gelatine in a little water and stir into the custard; when cool, mix in the passion-fruit, and the whipped whites of the eggs, sweeten to taste, turn into a wet mould and leave till set.
