A MEAT GLAZE HINT.
A cheap way of glazing tongues, galantines, and so on, is to dissolve one cube of meat extract in half a gill of water, and add one teaspoonful of powdered gelatine. This glaze should be painted on the galantine, when it will set readily and have the appearance of a glaze made from stock.
