Put half a pound 'of butter beans in cold water and leave them to soak all night. In the morning drain thoroughly and put them into a saucepan with three cupfuls of water and a small chopped onion. Allow to simmer until tender—about three hours —adding more water if necessary, and putting in seasoning to taste half an hour before taking them up. Drain the beans and make a good, rich, white sauce into which grate a little Parmesan cheese. Place a layer of sauce in a buttered fireproof eathenware dish; add the beans in an even layer; place the remainder of the sauce on top; add a thick layer of grated Parmesan .cheese, sprinkle lightly with breadcrumbs, and over all place a few nuts of butter. But into the oven to brown and serve hot in the same dish.
