SUBSTITUTE FUR LETTUCE
Endive requires much less warmth than lettuce and is useful where lettuce ia not available during the winter months. It is a useful ingredient in many culinary preparations. It is sown and treated in the same manner as lettuce. About three months after sowing, or as soon as the plants are fully grown, the leaves should be gathered together at the top and tied with raffia, and again round the middle a week later. If watering is necessary after tying it should be applied only at the root of the plant. Blanching is also effected by placing inverted flower pots over the plants, covering the hole in tho pot with a piece of tile of a flat stone.
